Aquafaba Banana Muffins! Everyone needs an easy banana muffin recipe, right?! This one is adapted from I am Baker. I love her site, but I love her Instagram account even more. If you like a bit of humor in your feed check her out. I followed her recipe for “THE BEST BANANA MUFFINS” and simply replaced the egg with 3 tablespoons of aquafaba. Easy as pie! This is a simple banana muffin – no nuts, choc chips or cinnamon here, just yummy buttery banana flavor. I like a basic recipe that I can easily customize! I had a little leftover streusel topping in the freezer which I sprinkled over half the muffins, because muffins are infinitely better with streusel!
