Healthy 3 ingredient FUDGE. Vegan almond butter fudge to be precise!
I have been meaning to try this recipe for ages. Seriously it was like one of the first things I pinned when I took the Pinterest plunge.
I mean c’mon it’s 3 basic ingredients, super quick, vegan, raw and refined sugar free! Sounds almost too good to be true, and it kinda is. It is not a super smooth fudge, the almond meal gives it a nice chewy texture that I really liked. The kids gave it an unimpressed ehhh, but then went back for more. Who even knows what that means? Anyway, the original recipe is from The Big Man’s World and has quite a few more 3 ingredient recipes that I want to try out as well, and after this one, I definitely will.
The original recipe is almond meal/flour, cashew butter and maple syrup. That’s it. I used almond butter because that is what I had, and brown rice syrup. The recipe states you can use whatever sticky sweetener you like, and I quite like the mild sweetness of rice syrup. If you need a quick healthy snack I would totally recommend this one!
